Slow Cooker Apricot Chicken



  • 1 tbsp Olive oil
  • 4 Chicken thighs, skinless
  • 1 Onion, sliced
  • 1 cup Apricots, sliced in half (fresh or dried)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 8 oz Chicken broth
  • 1 lemon, juiced and zested
  • 2 tbsp Dijon mustard
  • 4 Garlic cloves, minced
  • 1 tsp Thyme


  1. In a large pan, heat olive oil over medium heat
  2. Season chicken with salt and pepper
  3. Add chicken to pan, saute until golden
  4. Add chicken to slow cooker
  5. Add onions and apricots to slow cooker
  6. In a small mixing bowl, combine chicken broth, lemon juice, lemon zest, dijon mustard, garlic, thyme, and remaining salt and pepper
  7. Pour sauce over chicken
  8. Cook on high heat for 3 hours
  9. Shred chicken and let sit for additional 15 minutes
  10. Serve over rice, or pasta
