Chicken Noodle Soup

Ingredients:

  • 12 oz Pasta
  • 2 tbsp Olive oil
  • 1 Onion, diced
  • 2-3 Carrots, peeled and chopped
  • 3 Garlic cloves, minced
  • 32 oz Chicken broth
  • 2 tbsp Parsley
  • 2 Bay leaves
  • 1/2 tbsp Salt
  • 1 tsp Pepper
  • 2 Chicken Thighs
  • 4 tbsp Butter
  • 1/4 cup Flour
  • 2 1/2 cups Milk
  • 1/3 cup Heavy cream

Instructions:

  1. Prepare pasta as directed on packaging
  2. In a large pot, heat olive oil over medium heat
  3. Add onions and carrots, saute until soft
  4. Add garlic, saute until aromatic
  5. Next, add chicken broth, parsley, bay leaves, salt, and pepper
  6. Once simmering, add chicken thighs
  7. Allow chicken to cook for about 15 minutes
  8. Remove chicken, and allow to cool
  9. Shred chicken into small pieces
  10. Melt butter in a medium sauce pan, over medium heat
  11. Add flour, stir constantly
  12. Slowly whisk in milk, until lumps are smoothed out
  13. Whisk in heavy cream and bring to a boil
  14. Pour milk mixture into pot
  15. Return chicken into pot
  16. Serve warm
