Chocolate Raspberry Cake

  • 1 cup Buttermilk
  • 1 cup Water
  • 2/3 cup Oil (I used grape seed oil)
  • 2 1/4 cup Sugar
  • 2 Eggs
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 2 cups Flour
  • 3/4 cup Unsweetened cocoa powder
  • 12 oz Cream cheese
  • 2 cups Raspberries
  • 1/2 cup Heavy whipping cream
  • 4 oz Semisweet chocolate chips


  1. Preheat oven to 350°
  2. Prepare 9 inch round cake pan with butter spray and dust with flour
  3. In a large mixing bowl combine buttermilk, water, oil, 2 cups of sugar, eggs, baking soda, and salt
  4. Once well combined, add flour and cocoa powder
  5. Pour 1/3 of the batter into the pan
  6. Bake for 30 minutes
  7. Once cooled remove onto wired rack
  8. Repeat for remaining 2 portions of batter
  9. In a medium mixing bowl, beat together cream cheese, 1 cup raspberries, and remaining sugar
  10. Place one cake layer onto cake plate
  11. Evenly spread 1/3 of the cream onto the cake
  12. Add next cake layer, and repeat
  13. Use remaining cream to fill in the sides of the cake
  14. In a small sauce pan over medium heat, add heavy whipping cream
  15. Once boiling remove from heat and add in chocolate chips
  16. Do not stir, just let them sit for 5 minutes
  17. Then stir until smooth
  18. Let cool for about 15 minutes
  19. Pour over cake, allowing to drip down the sides
  20. Top with remaining raspberries
  21. Let chill for 30 minutes, the serve
