Pesto Chicken Meatballs

Ingredients:

  • 1 lb Ground chicken
  • 1/2 cup Parmesan cheese, grated
  • 1 Egg
  • 1/2 cup Breadcrumbs
  • 2 1/2 tbsp Pesto
  • 4 Garlic cloves, minced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tbsp Butter
  • 1 tbsp Olive oil
  • 2/3 cup Sour cream
  • 1 1/4 cup Chicken broth
  • 2 tsp Lemon juice
  • 1 tsp Cornstarch

Instructions:

  1. In a large mixing bowl combine ground chicken, Parmesan cheese, egg, breadcrumbs, 2 tbsp Pesto, 2 garlic cloves, salt, and pepper
  2. In a large skillet, heat butter and olive oil over medium heat
  3. Form meat mixture into balls and add to skillet
  4. Flip once golden and cook through
  5. Then remove meatballs to a plate
  6. In the same skillet, saute 2 garlic cloves
  7. Once aromatic, slowly add sour cream
  8. Once simmering add chicken broth, remaining pesto, and lemon juice
  9. In a small bowl combine cornstarch and 1 tsp water
  10. Slowly stir cornstarch mixture into skillet
  11. Once smooth, return meatballs into skillet
  12. Saute for a few minutes, then serve
