Lemon Pudding Trifle



  • 4 Eggs
  • 1/2 cup Sugar
  • 3/4 cup Flour
  • 1 tsp Baking powder
  • 8 oz Cream cheese, softened
  • 2 Lemon pudding mix (3.4 oz)
  • 3 cups Milk
  • 8 oz Cool whip
  • 4 cups Blueberries


  1. Preheat oven to 350°
  2. Prepare a baking dish with parchment paper
  3. In a medium mixing bowl, whisk together eggs and sugar on high speed until thick
  4. Sift in flour and baking powder, mixing slowly just until combined
  5. Pour batter into prepared pan and bake for 15 minutes
  6. In a large mixing bowl, beat cream cheese, pudding mix, and milk until no clumps remain
  7. Fold in cool whip
  8. Cut cake into bite size pieces
  9. Place a layer of cake into a trifle bowl
  10. Cover with part of the pudding mix
  11. Layer with blueberries
  12. Repeat for 2 more layers
  13. Cover and refrigerate until ready to serve
