Creamy Pasta Soup

Ingredients:

  • 2 Chicken thighs, skinless boneless, cut into 1 inch pieces
  • 3 tbsp Olive oil
  • 3 tbsp butter
  • 1/2 onion, diced
  • 6 Garlic cloves, minced
  • 2 Carrots, peeled and sliced
  • 1 Green bell pepper, seeded and chopped
  • 1/3 cup Flour
  • 10 cups chicken broth
  • 2 tbsp Cornstarch
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Parsley
  • 1 tsp Basil
  • 1/2 tsp Oregano
  • 2 Bay leaves
  • 12 oz Pasta
  • 3 cups Half & half
  • 1/2 cup Heavy cream
  • 2 cup Spinach, chopped
  • 1 cup Grated Parmesan cheese

Instructions:

  1. In a large soup pot, heat 1 tbsp olive oil over medium heat
  2. Add chicken, cook until done
  3. Add butter, remaining olive oil, onions, and garlic
  4. Once golden, add carrots and bell peppers
  5. Once softened sift in flour (mixture will become very thick)
  6. Reduce heat to low and gradually stir in chicken broth
  7. In a small bowl combine cornstarch with 2 tbsp water
  8. Once soup is simmering stir in cornstarch mixture
  9. Stir in salt, pepper,parsley, basil, oregano, and bay leaves
  10. Once simmering add your favorite pasta and stir
  11. Bring to a boil, then stir in half & half, heavy cream, spinach, and Parmesan cheese
  12. Let simmer for a few minutes
  13. Serve garnished with additional cheese if desired
