Parmesan Pesto Chicken



  • 3-4 Chicken Thighs, cut in half
  • 1 Egg
  • 1 tbsp Mayonnaise
  • 1 tbsp Pesto
  • 3 tbsp Milk
  • 1/4 cup Parmesan
  • 1/2 cup Oil


  1. Using a meat mallet, pound meat to desired thickness
  2. In a medium mixing bowl combine egg, mayonnaise, pesto, milk, and parmesan
  3. Add chicken and cover thoroughly
  4. Marinate for 1-2 hours
  5. In a large skillet heat oil over medium heat
  6. Add chicken thighs, fry until golden
  7. Turn and fry until cooked through
  8. Transfer onto paper towel
  9. Serve with your favorite sides
