Lemon Shrimp & Asparagus



  • 1 lb Asparagus, ends trimmed
  • 2 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Paprika
  • 1/4 tsp Red pepper flakes
  • 1 lb Uncooked shrimp
  • 3 tbsp Butter, cubed
  • 1 Lemon, sliced


  1. Preheat oven to 400°
  2. Line a baking pan with foil, arrange asparagus in a single layer
  3. In a small mixing bowl, combine olive oil, garlic, salt, and pepper
  4. Spread half the mixture onto asparagus
  5. Bake asparagus for 6 minutes
  6. Push asparagus to one side of pan
  7. Add paprika and red pepper flakes to olive oil mixture
  8. Cover shrimp with all of the remaining olive oil mixture
  9. Layer shrimp in a single layer next to asparagus
  10. Place butter cubes on top of asparagus and shrimp
  11. Next layer lemon on top of the butter cubes
  12. Bake for 10 minutes
  13. Serve with pasta or rice, squeeze roasted lemon on shrimp for extra flavor
