Meatball Noodle Soup



  • 10 cups Water
  • 1 tbsp Salt
  • 4-6 Potatoes, peeled and diced
  • 2 Carrots, peeled and sliced
  • 1 tbsp Olive oil
  • 1 Onion, 1/2 grated and 1/2 diced
  • 4 oz Pasta
  • 1 lb ground pork
  • 1 tsp Garlic salt
  • 1/2 tsp Pepper
  • 3 Eggs
  • 1 tbsp Dill


  1. Heat a large soup pot on high heat, fill with water and add salt
  2. Add chopped potatoes, and bring to a boil
  3. Reduce heat to medium and add carrots, return to boil
  4. Heat olive oil in a small skillet over medium heat
  5. Add chopped onions, saute until golden, add to pot
  6. Add pasta of your choice
  7. In a small mixing bowl, combine ground pork, grated onion, garlic salt, pepper, and one egg
  8. Form meat into round balls, then add to pot one by one
  9. In a small bowl beat together remaining eggs
  10. Stir eggs slowly into soup, so that they do not clump
  11. Add dill
  12. Cook until meatballs are cooked through, then serve
