Chicken Tortilla Soup



  • 1 tbsp Olive oil
  • 1 Onion, chopped
  • 3 Garlic cloves, minced
  • 32 oz Chicken broth
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 Chicken breasts
  • 15 oz Can diced tomatoes, with green chilies
  • 1 1/3 cup Milk
  • 1/3 cup Masa harina
  • 25 oz Canned pinto beans, drained
  • 15 oz Canned corn, drained
  • 2/3 cup Heavy whipping cream
  • 1/4 cup Sour cream


  1. Heat a large pot on medium heat, add olive oil
  2. Once hot, sautte onion and garlic
  3. Add chicken broth, chili powder, cumin, paprika, salt, and pepper
  4. Next, add chicken breasts, and bring to a boil
  5. Once chicken is cooked through, remove and shred
  6. Add diced tomatoes with green chilis
  7. Place chicken back into the pot
  8. In a small mixing bowl, combine milk and masa harina
  9. Pour mixture into pot, stir frequently
  10. Add pinto beans and corn, bring back to a boil
  11. Then, stir in heavy whipping cream and sour cream
  12. Cook until heated through
  13. Serve with cheese, sour cream, or tortilla chips
