Chicken Fried Rice



  • 1 1/2 cup brown rice, uncooked
  • 2 Chicken thighs, cut into bite size pieces
  • 1 tbsp Sesame oil
  • 1 tbsp Canola oil
  • 2 Carrots, peeled and finely diced
  • 3 Garlic cloves, minced
  • 3 Eggs
  • 3 Green onions, chopped
  • 3 tbsp Soy Sauce
  • 1/2 tsp Salt
  • 1/4 tsp Pepper


  1. Cook rice as directed on packaging
  2. In a large skillet, heat sesame oil and canola oil on low heat
  3. Add chicken thighs, cook covered until chicken is cooked through
  4. Add carrots and garlic, saute until carrots are softened
  5. Move vegetables to the sides
  6. Next add eggs in the center and scramble
  7. Once cooked through, mix everything together
  8. Add green onions
  9. Then add rice, soy sauce, salt, and pepper
  10. Stir to combine
  11. Serve with sriracha if desired
