Fruit Mousse Cake

Traditional Ukrainian borsch (1)


  • 3 Eggs
  • 1/3 + 1/2 cup Sugar
  • 1/2 cup Flour
  • 1/2 tsp Baking powder
  • 1 lb Strawberries, chopped
  • 3 oz Blueberries
  • 11 oz Canned mandarins, drained and halved
  • 2 cups Heavy whipping cream
  • 8 oz Whipped cream cheese, softened
  • 6oz Strawberry jello
  • 1 cup Boiling water
  • 1 cup Cold water


  1. Preheat oven to 350°
  2. Butter a 9 inch spring form pan
  3. In a medium mixing bowl, whisk together eggs and 1/3 cup of sugar on high speed until thick
  4. Sift in flour and baking powder, mixing slowly just until combined
  5. Pour batter into prepared pan and bake for 15 minutes
  6. In a medium mixing bowl, combine jello mixture with boiling water
  7. Once jello is dissolved, stir in cold water, refrigerate until needed
  8. In a large mixing bowl, mix together heavy whipping cream and 1/2 cup of sugar on high speed
  9. Once smooth, add whipped cream cheese
  10. Once no clumps remain, whisk in jello
  11. Once combined, fold in fruit
  12. Slice sponge cake in half
  13. Place bottom half inside a trifle bowl
  14. Pour in half of the fruit mixture
  15. Next, place remaining half of the sponge cake on top
  16. Pour in remaining mixture
  17. Refrigerate until set
  18. Garnish as desired, then serve
