Bacon Pasta Bake



  • 8 oz Pasta, bow tie or penne
  • 6 Bacon slices
  • 2 cups Cooked chicken, rotisserie or canned
  • 1/2 Onion, chopped
  • 1/2 Green bell pepper, chopped
  • 2 Garlic cloves
  • 2 Tomatoes, diced
  • 1 cup Spinach, chopped
  • 12 oz Evaporated milk
  • 1/2 cup Ranch
  • 2 cups Cheddar cheese, shredded


  1. Preheat oven to 350°
  2. Cook pasta as directed on packaging
  3. Heat a large pan on medium heat, add bacon
  4. Once bacon is cooked drain half of the fat, then add chicken
  5. After about a minute, add onions, green bell pepper, garlic, tomatoes, and spinach
  6. Once spinach is wilted, stir in evaporated milk
  7. Once simmering, add ranch and cheddar cheese
  8. Next stir in cooked pasta, mix until combined
  9. Spoon pasta mixture into a medium baking dish
  10. Bake for 20 minutes
  11. Serve immediately
