Chicken & Veggie Lo Mein

Ingredients:

  • 5 tbsp Soy sauce
  • 1 tsp Honey
  • 1 tbsp Cornstarch
  • 2 tsp Sesame oil
  • 1/8 tsp Red pepper flakes
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 14 oz Lo mein noodles
  • 2 tbsp Olive oil
  • 2 Chicken Thighs, cut into 1″ pieces
  • 2 Garlic cloves, minced
  • 1/2 tsp Ginger
  • 1/4 Cabbage, thinly sliced
  • 1 Carrot, peeled and grated
  • 2 Green onion, chopped

Instructions:

  1. In a small mixing bowl, combine soy sauce, honey, cornstarch, sesame oil, red pepper flakes, salt, and pepper
  2. Cook noodles as directed on packaging
  3. Heat a large skillet on medium heat, add oil and chicken
  4. Once chicken is cooked through add 1 tbsp of sauce
  5. Stir in garlic, ginger, cabbage, and carrots
  6. Once cabbage is soft, add noodles, remaining sauce, and green onions
  7. Remove from heat, serve hot
