Chicken Gnocchi Soup

Ingredients:

  • 1 tbsp Olive oil
  • 1 Chicken thigh, cut into 1″ pieces
  • 1 tbsp Butter
  • 1/2 Onion, peeled and grated
  • 2 Carrots, peeled and grated
  • 4 Garlic cloves, minced
  • 2 tbsp Flour
  • 6 cup Water
  • 4 Chicken bouillon cubes
  • 1/2 tsp Thyme
  • 1/2 tsp Salt
  • 2 cup Heavy whipping cream
  • 4 cups Spinach, chopped
  • 12 oz Gnocchi
  • 1 tbsp Cornstarch

Instructions:

  1. In a large pot saute olive oil and chicken on medium heat
  2. Add butter, onion, carrots. and garlic
  3. Once carrots are softened, mix in flour
  4. Increase heat to high, add water, chicken bouillon cubes, thyme, and salt
  5. Once boiling, slowly stir in heavy whipping cream
  6. Reduce heat to medium, add spinach and gnocchi
  7. In a small bowl combine 1 tbsp cornstarch, and 1 tbsp water
  8. Once soup begins to simmer, stir in cornstarch mixture
  9. Reduce to low heat and let stand for 15 Minutes
  10. Serve with cayenne pepper or paprika sprinkled on top
