Lemon Jello Squares

Traditional Ukrainian borsch


  • 6 oz Graham cracker crumbs
  • 4 oz Butter, room temperature
  • 8 oz Cream cheese, room temperature
  • 16 oz Cool whip
  • 1/4 cup Sugar
  • 1 lb Strawberries, chopped
  • 6 oz Lemon jello


  1. In a medium mixing bowl, combine graham cracker crumbs and butter
  2. Press throughout a 13×9 pyrex dish, refrigerate until next layer
  3. Using the same mixing bowl blend together cream cheese, 8 oz cool whip, and sugar
  4. Layer on top of graham cracker crust
  5. Next layer strawberries evenly throughout dish, place back into refrigerator
  6. In a large mixing bowl, mix jello and 2 cups boiling water
  7. Once dissolved, add 1 cup ice cubes, mix until desolved
  8. Next blend in remaining cool whip into jello
  9. Pour over strawberries, using a fork remove any bubbles
  10. Refrigerate until firm, 2 hours minimum
  11. Decorate as desired and serve
