Parmesan Chicken & Potatoes

Ingredients:

  • 4 Chicken thighs, with bone and skin
  • 2 tsp Italian seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 5 oz Butter
  • 1 1/2 lb Gold potatoes, cut into quarters
  • 3 cups Baby spinach
  • 4 Garlic cloves, minced
  • 1 tbsp Flour
  • 1/2 cup Chicken broth
  • 1/2 tsp Thyme
  • 1/2 tsp basil
  • 1/2 cup Half & half
  • 1/2 cup Grated Parmesan

Instructions:

  1. Preheat oven to 400°
  2. Season chicken with Italian seasoning, salt, and pepper
  3. Heat a large skillet to medium heat, add 1 tbsp butter
  4. Once butter is melted add chicken, cook until golden then turn
  5. Once both sides are golden place into a large baking dish
  6. Add gold potatoes to baking dish
  7. Returning to the skillet add 1 tbsp butter, stir in spinach
  8. once wilted add to baking dish
  9. Add remaining butter to skillet
  10. Add garlic, stirring frequently
  11. Once garlic is fragrant, stir in flour
  12. Gradually add chicken broth, thyme, and basil
  13. Once combined, stir in half & half and parmesan
  14. Once thickened pour over chicken and potatoes
  15. Add additional salt and pepper if desired
  16. Bake for approximately 30 minutes
  17. Serve garnished with parsley
