Chicken & Rice Soup



  • 3 Chicken thighs, cut into 1″ pieces
  • 10 cups Cold water
  • 2 tbsp Salt
  • 4 Large potatoes, diced
  • 1/2 cup Jasmine rice
  • 2 tbsp Olive oil
  • 1/2 Onion, finely diced
  • 2 Medium carrots, peeled and grated
  • 1 tsp Dill


  1. In a large pot with 10 cups of cold water, add chicken thighs and salt, on high heat
  2. Bring to a boil, skim off crud that rises to the top, reduce heat to medium
  3. In a skillet, heat olive oil on medium heat, add onions
  4. Once onions are transparent, add carrots, saute until carrots are softened
  5. Once water begins simmering, add potatoes and rice
  6. After a few minutes add sauteed onions and carrots
  7. Once rice is cooked through, add dill, and remove from heat
  8. Let stand for about 15 minutes, then serve
