Spinach Tomato Tortellini

Ingredients:

  • 20 oz Three cheese tortellini
  • 2 tbsp Unsalted butter
  • 2 Cloves garlic, minced
  • 3 tbsp flour (I used whole wheat)
  • 1 1/4 cup Milk
  • 1/2 cup Heavy whipping cream
  • 1 cup Tomatoes, diced
  • 1 1/2 cup Spinach, chopped
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 cup Grated Parmesan cheese

Instructions:

  1. Prepare tortellini as directed on packaging
  2. Heat a deep skillet on medium heat, add butter until melted
  3. Add garlic and saute for about 30 seconds
  4. Next add flour, cook until combined
  5. Slowly whisk in milk and heavy whipping cream
  6. Once mixture begins to simmer, add tomatoes and spinach
  7. Once spinach is wilted, add oregano, salt, pepper, and Parmesan cheese
  8. Drain tortellini, then add to mixture
  9. Serve immediately
