Zucchini Fritters / Pancakes



  • 3 Zucchini, grated
  • 1/2 Onion, diced
  • 2 Cloves of garlic, minced
  • 2 Eggs
  • 1/2 cup Flour (I used whole wheat)
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • Oil for the pan


  1. Grate zucchini into a bowl, drain any liquid
  2. Mix in onion and garlic into zucchini
  3. Add eggs into the bowl, mix well
  4. Mix in flour, baking powder, and salt
  5. Heat skillet to medium/low heat, then add about 1/4 cup of batter for each fritter/pancake
  6. Flip once golden, cook until both sides are golden
  7. Place unto a paper towel to drain off excess oil
  8. Serve with sour cream
